For Chutney
- Coconut cut into small pieces - 1/2 Cup
- Salt to taste
- Coriander leaves - 1/4th Cup
- Green Chilli - 1 Tsp
- Curd - 1/4th Cup
- Water as required
For Tempering -
- Oil - 1 Tsp
- Mustard Seeds - 1 Tsp
- Whole Red Chilli
- Curry Leaves
For Chutney
In a blender jar add coconut pieces, coriander leaves, green chilli and salt.
Add water as required. Blend it smooth.
Add curd and give a pulse to blend well.
For Tempering
Heat oil in pan.
Add mustard seeds and allow to splutter.
Add curry leaves and whole red chilli.
Add tempering to the chutney and mix well.
Transfer chutney to an air tight container and let it chill.
• Use fresh coconut for best taste.
• Do not blend too much after adding curd.
• Refrigerate in an air tight container else it will turn sour due to curd.
• Adjust the consistency as required, keeping in mind that it will thicken with time.
