Masale Bhat

Masale bhat is a spicy rice recipe from Maharashtrian cuisine. It is aromatic, flavourful and full of vegetables.

Ingredients
  

  • Cumin Seeds - 1 Tsp
  • Coriander Seeds - 1 Tsp
  • Oil - 1 Tbsp
  • Cumin Seeds - 1 Tsp
  • Chopped Green Chilli - 1 Tsp
  • Potato & Carrot - 1 Medium Size
  • Sliced Onion - 1 Medium Size
  • Ginger-Garlic Paste - 1 Tsp
  • Peas - 1/4th Cup
  • Chopped Tomato - 1 Large
  • Turmeric Powder - 1 Tsp
  • Red Chilli Powder - 1 Tsp
  • Goda Masala - 1/2 Tsp
  • Salt to taste
  • Powdered Masala
  • Bay leaf Cinnamon, Star Anise
  • Clove and Cardamom
  • Washed & Soaked Rice - 1 Cup
  • Ghee - 1 Tbsp
  • Water - 2.5 Cups
  • Grated Coconut

Instructions
 

Soaking Rice

  • Wash and soak rice in a bowl for 15 minutes.
  • Drain and rinse under running water. Keep aside in a strainer.

Masala Bhaat Powder –

  • Dry roast cumin seeds and coriander seeds on a low flame till aromatic.
  • Grind in a mortar pestle. Keep aside.

Cooking Procedure –

  • Heat oil in a handi.
  • Add jeera and allow to splutter. Add green chilli and let it cook.
  • Add potato and carrots (or veggies of your choice – brinjal, tendli). Mix well and cook for 2 mins.
  • Add sliced onions and mix well. Add ginger-garlic paste. Mix well and cook for a min.
  • Add peas and tomatoes. Mix well. Cover and cook for 2-3 minutes (or till veggies are done) on a low flame.
  • Add turmeric powder, red chilli powder, goda masala, powdered cumin and coriander, salt and whole spices. Mix well.
  • Add rice and mix gently. Roast for a min.
  • Add ghee and mix well. It adds aroma and flavor to the rice.
  • Add water and let it boil.
  • Cover and cook on a low flame till rice is done. Check (stir) once in between.
  • Garnish with grated coconut. Finish with lime juice.
  • Serve hot.

Notes

• Soaking rice beforehand takes less time to cook.
• 1 cup of uncooked rice yields 2 cups (approx.) of cooked rice.
• This preparation of rice is slightly moist than pulao or biryani, so add a little extra water.
• Finish with lime juice for better taste.
• Traditionally veggies like brinjal, cauliflower and tendli is also added. You can add as per your choice.
• You can also add half a cup of grated coconut at the end and mix well for an added texture and flavour.
