Paneer Khurchan Recipe

Ingredients
  

  • Oil or Ghee preferred - 1 Tbsp
  • Cumin Seeds - 1 Tsp
  • Finely Chopped Green Chilli & Coriander
  • Ginger Garlic paste - 1 Tsp
  • Sliced Onion - 1 Medium Size
  • Sliced Capsicum - 1 Medium Size
  • Sliced Tomato - 1 Large
  • Turmeric Powder - 1 Tsp
  • Red Chilli Powder - 1 Tsp
  • Garam Masala - 1 Tsp
  • Kasuri- 1 Tsp (Dried Fenugreek leaves Methi)
  • Salt to taste
  • Water or Whey - 2 - 3 Tbsp
  • Diced Paneer - 150 gm
  • Finely Chopped Coriander - 1 Tbsp
  • Grated Paneer - 1 Tbsp
  • Fresh Cream or Malai - 1 Tbsp

Instructions
 

  • Heat ghee in a pan. Add cumin seeds and let it splutter.
  • Add ginger-garlic paste, finely chopped green chilli and coriander leaves. Cook for a min on a low flame.
  • Add sliced onion. Mix well. Cook for a min or two.
  • Add sliced capsicum and tomato. Mix well and cook for 2-3 mins on a high flame.
  • Add turmeric powder, red chilli powder, garam masala powder, kasuri methi and salt.
  • Mix everything well. Add whey (residue of paneer) or water.
  • Give it a boil on a high flame.
  • Add paneer and mix well.
  • Cook for 2 mins on a high flame. Do not stir.
  • Now scrape(khurachana) paneer from the bottom of the pan and mix. The paneer will turn slightly brown and crispy.
  • Finish with fresh cream, grated paneer and finely chopped coriander leaves.
  • Serve hot with roti, paratha or puri.
