Cut leftover roti into strips. Set aside
Heat oil in a pan. Add finely chopped ginger, garlic and green chilli.
Cook for a min on a low flame.
Add sliced onions, julienne carrots and bell peppers. Toss and cook on a high flame for 2-3 mins.
You can also add vegetables of your choice like capsicum, cabbage, spring onion etc.
Next add salt, pepper, schezwan sauce, red chilli sauce, ketchup, vinegar and soy sauce.
Add roti strips and give a good mix.
Give everything a good mix.
Cook for 2-3 mins or until everything comes well together.
Serve hot.
