Beetroot & Carrot Salad

Beetroot and carrot salad is a healthy, easy and quick salad recipe. It can be prepared with easily available ingredients at home.

Ingredients
  

  • 2 Nos. Beetroot
  • 2 Medium Carrots
  • Salt to taste
  • 1 Tsp Lime Juice

Tempering

  • 1 Tsp Oil
  • 1/2 Tsp Mustard Seeds
  • 1 Tsp Sesame Seeds
  • Curry Leaves
  • 1/4th Cup Roasted and Crushed Peanuts
  • 1/4th Cup Grated Fresh Coconut

Instructions
 

  • Julienne cut beetroot and carrot. You can use the food processor for ease the job.
  • Transfer them to a large mixing bowl.
  • To it add salt and lime juice. Give it a quick mix.

Prepare Tadka –

  • Heat oil in a tadka pan.
  • Splutter mustard seeds, curry leaves and sesame seeds.

Adding Tadka –

  • Add tadka to the salad, right before serving.
  • Finish with roasted crushed groundnut and grated coconut. Give it a quick mix.
  • Serve chilled.

Notes

 Serve the salad immediately, else it will turn soggy.
Add salt and tadka right before serving.
Adjust salt and lime juice as per taste.
