Heat oil in a handi.
Add jeera and allow to splutter. Add green chilli and let it cook.
Add potato and carrots (or veggies of your choice – brinjal, tendli). Mix well and cook for 2 mins.
Add sliced onions and mix well. Add ginger-garlic paste. Mix well and cook for a min.
Add peas and tomatoes. Mix well. Cover and cook for 2-3 minutes (or till veggies are done) on a low flame.
Add turmeric powder, red chilli powder, goda masala, powdered cumin and coriander, salt and whole spices. Mix well.
Add rice and mix gently. Roast for a min.
Add ghee and mix well. It adds aroma and flavor to the rice.
Add water and let it boil.
Cover and cook on a low flame till rice is done. Check (stir) once in between.
Garnish with grated coconut. Finish with lime juice.
Serve hot.
