Masale Bhat is a Maharashtrian variety of rice preparation. I love rice and I keep trying different preparations of rice at home
For the first time, I tried this recipe in Pune at a Maharashtrian cuisine restaurant. Maharashtrian cuisine is full of flavours and is very healthy for the ingredients that go into this cuisine. As my house help is Maharashtrian, I asked her for the recipe after I tried at the restaurant. I learnt the recipe from her but changed it a bit as per the liking of my family members.
We love the dish so much that we have been constantly making this dish at my home for 2 years now. We call it Maharashtrian Veg Pulao. The recipe I am sharing is my version which is a bit different from what is prepared traditionally in Maharashtra.
Masala bhaat is a spicy, flavourful, aromatic and full of vegetable rice preparation. It is a one-pot recipe and hence it doesn’t require much efforts and time to cook it. Lots of vegetables not only makes it healthy but also gives it different flavours and adds texture to it.

Masala bhaat, also known as Masale Bhat makes for a good lunch box recipe or a quick and light dinner as well. It is also a good dish to serve along with a simple meal to make it complete and delicious. Pair it with some raita or chaach (buttermilk) to enhance the taste even more.

How to Prepare –
Wash rice thoroughly 4 - 5 times till water comes out clean. Soak in enough water for approx. 10 – 15 mins. While rice is soaking keep other ingredients ready to save time. Peel and slice onion and other vegetables. Peel and cut garlic and ginger. Wash all the vegetables thoroughly 2 -3 times.
What makes Masale Bhat healthy –
A lot of vegetables and spices makes this dish healthy. The spices used provides the necessary heat to the body. Also, the rice is light and easy to digest.
What kind of rice can be used -
As Masale bhat is not each grain separate preparation. Rather it is a bit moist and soft. Dubraj, Indrayani, Kolam or even basmati can be used for this preparation.
Step by Step Masale Bhat Recipe -
Soaking Rice
• Wash and soak rice in a bowl for 15 minutes.
• Drain and rinse under running water. Keep aside in a strainer.
Grounded Spice Mix –
• Dry roast cumin seeds and coriander seeds on a low flame till aromatic.
• Grind in a mortar pestle. Keep aside.
Cooking Procedure –
• Heat oil in a handi.
• To it add jeera and allow to splutter. Next, add green chilli and let it cook.
• After a min. add potato and carrots (or veggies of your choice – brinjal, tendli). Mix well and cook for 2 mins.
• Next, add sliced onions and ginger-garlic paste. Mix well and cook for a min.
• Also, add peas and tomatoes. Mix well. Cover and cook for 2-3 minutes (or till veggies are done) on a low flame.
• To flavour the rice, add turmeric powder, red chilli powder, goda masala, powdered cumin and coriander, salt and whole spices. Mix well.
• Finally, add rice and mix gently. Roast for a min.
• For the added flavour add ghee and mix well.
• Next, add water and let it boil.
• Cover and cook on a low flame till rice is done. Check (stir) once in between.
• Garnish with grated coconut. Finish with lime juice.
• Serve hot.

- Peas - 1/4th Cup
- Chopped Tomato - 1 Large
- Turmeric Powder - 1 Tsp
- Red Chilli Powder - 1 Tsp
- Goda Masala - 1/2 Tsp
- Salt to taste
- Powdered Masala
- Bay leaf Cinnamon, Star Anise
- Clove and Cardamom
- Washed & Soaked Rice - 1 Cup
- Ghee - 1 Tbsp
- Water - 2.5 Cups
- Grated Coconut
