Bharwa Gilki (Stuffed Sponge Gourd) is prepared by stuffing gilki with spices mixed with roasted besan (gram flour) and cooked in oil till done. Gilki also, known as turai or sponge gourd is commonly available vegetable all across India. It is prepared in a different way in different regions.

 

Gilki doesn’t take much time to prepare and has too much water content. I like this version of bharwa gilki which my Mom prepares. I only add an extra ingredient which is roasted besan to give it a nice nutty and creamy flavour.

Bharwa gilki or turai makes for a good lunch box recipe and easy Indian dinner recipe as well. People who don’t like eating gilki also enjoys it when I prepare it this way.

 

Gilki, also known as sponge gourd is full of nutritional value and seems like a great recipe for a meal plan to bring in a healthy lifestyle change. Making this recipe in mustard oil enhances the taste. Besides that, it is good oil which helps to control cholesterol levels as well.

How to Prepare –

 

Wash, peel, cut gilki into 2-3 inch pieces and make a vertical slit in each piece. Mix the spices along with roasted besan and keep ready.

 

 

How to make Bharwa Gilki ki sabzi–

Stuff gilki with the mixed spices. Heat oil in a pan and place gilki. Turn over to coat oil all over. Cover and cook for 2-3 mins. Uncover and cook till done. Make sure to stir gilki sabzi in between. Do not overcook.

How to serve Bharwa Gilki –

 

This sabzi goes well with roti or phukla. Serve along with roti, dal and rice to make a complete meal.

 

Step by Step Recipe –

Prepare the Stuffing –

Gilki Stuffing

• In a mixing bowl add roasted besan, red chilli powder, turmeric powder, dry mango powder, coriander powder, salt to taste and finely chopped coriander. Mix well.

• Add little water to make a fine paste.

• Stuffing is ready.

Method to make Bharwa Gilki –

• Wash, peel and cut gilki into 2-3 inches.

 

Stuffed Gilki Recipe

 

• Slit gilki vertically and fill the stuffing.

• Heat mustard oil till it reaches smoking point. Switch off the flame and let it cool a bit.

 

Bharva Turai Recipe

 

• Switch on the flame. Place stuffed gilki and cook for a min.

 

Bharva Gilki Recipe

 

• Flip and let it cook. Cover and cook for 2-3 mins.

• Uncover and cook on a low flame till tender.

• Do not stir a lot, just flip as and when required.

• Discard excess oil if any.

• Make sure not to overcook the gilki.

 

Bharwa Gilki

• Serve hot with roti or a side dish with rice and daal.

Notes

• Always heat mustard oil till smoking point and make sure to let it cool a bit before starting with the recipe.
• Do not overcook gilki else its will turn mushy.
• Do not stir too much else the stuffing will come out.
