Bhutte ka kees is street food from Indore which is prepared using desi bhutta or American corn or a mix of both.
The sweet and sour flavour with the freshness of coriander and goodness of coconut makes it super delicious. You can easily find it in any sweet shop of Indore, especially in Chappan and Sarafa.
Sarafa is a known area famous for its street food at night. There are so many varieties of food from all over the place. It starts from 7:00 PM and remains open till around 3:00 AM in the morning.
One of the famous street food from the lanes of sarafa is bhutte ka kiss. The aroma of food and the way the street vendors prepare will tempt you to try the food. It will leave you in the dilemma of what to eat and what to miss.
One thing for sure you must not miss is Bhutte ka kees.
Though we prepare it at home but also enjoy it eating out. Ever since lockdown, we have been missing going to the Sarafa and enjoying this dish. So we are making it more often at home.
This is the most requested recipe on my Instagram page. I thought of finally sharing with you all this time as I can understand how difficult it must for Indore people who are living out of Indore, to resist this delicacy.

Pre preparation for Bhutte ka Kees –
Peel and grate bhutta (sweet corn). Finely chop green chilli and grate the coconut. Roast besan well in advance and keep all the other suggested ingredients ready.
How to make Bhutte Ka Kees –
Heat oil, splutter cumin seeds and add green chilli, asafoetida and turmeric powder. Give it a mix and add grated corn.
Mix everything well and cook on a medium-low flame. Cover and cook for 4-5 mins. Uncover and cook till its half done. Keep stirring in between.
Add in the remaining ingredients except for coriander leaves and grated coconut.
Keep stirring and cooking till done. Finish it with coriander leaves and grated coconut. Serve hot.
Things to keep in mind to make perfect Bhutte Ka Kees –
1. Prefer cooking it in a nonstick pan or a heavy bottom cast iron pan, as it tends to stick to the bottom of the pan a lot.
2. You can also puree corn but grated corn gives a better texture.
3. Adjust the consistency and taste as per your choice.
4. Keep stirring in regular intervals to ensure even cooking and prevent from sticking to the bottom of the pan.

How to serve Bhutte Ka Kees –
Bhutte ka kees is a snack recipe which can be served during tea time or as a side dish with an Indian meal.
It is a healthy snack recipe which can be served at any time of the day.
Step by Step Recipe of Bhutte Ka Kees –
1. Heat oil in a pan.
2. Splutter cumin seeds, add green chilli and let it cook.
3. Lower the flame and then add asafoetida and turmeric powder. Give it a mix.
4. Now add grated corn and give it a good mix.
5. Cover and cook till its half done. Keep stirring in between. Make sure it doesn’t stick to the bottom of the pan.
6. Uncover, add red chilli powder, salt, sugar, roasted besan and warm milk. Mix everything well.
7. Cover and cook till you get desired consistency. Keep stirring in between.
8. Finish it with lime juice, coriander leaves and grated coconut.
9. Mix well and serve hot.

Ingredients
- 2 Tbsp Oil
- 1 Tsp Cumin Seeds
- 1 Tsp Green Chilli
- Asafoetida
- 1/2 Tsp Turmeric Powder
- 1 1/2 Cups Grated Corn
- 1 Tsp Red Chilli Powder
- Salt to taste
- 1.5 Tbsp Roasted Besan
- 1/4th Cup Luke Warm Milk
- 1 Tsp Sugar
- 1 Tbsp Coriander leaves
- 1 Tsp Lime Juice
- 4 Tbsp Grated Coconut
Instructions
- Heat oil in a pan.
