It is spicy, tangy, easy and delicious starter recipe. It makes for an amazing party snack. Tandoori gobhi is prepared with blanched gobhi, marinated with curd or yoghurt along with few spices. It is healthy and can be prepared easily at home.

Tandoori gobhi is traditionally cooked in a clay tandoor. Since it is not easily available at home, we can cook it in an oven or even on the stovetop.

I always prefer tandoori starters over any other. We have a clay tandoor at my Mom’s place and relish everything prepared in it. It is like a family dinner party when food is prepared in tandoor.

The conversations and leg-pulling that involves while the food is being prepared make for a great memory.

Even in restaurants I always order at least one tandoori starters. Tandoori gobi is one of my favourites.

The charred texture, smoky flavour that tandoor gives to any dish is unbeatable. The spices mixed in marination has the power to make any vegetable taste out of the world.

Though it seems little complicated and overwhelming to cook tandoori delicacies, once you get your hands at it, it becomes very easy. With ovens and different techniques available these days it gets easier to prepare these dishes at home as well with similar taste.

 

 

How to prepare for tandoori gobhi –

Separate florets from gobhi. Wash and clean thoroughly with water.

How to Clean and Blanch Gobhi –

For any recipe that includes gobhi (cauliflower), this is the first step I follow to make sure the cauliflower is clean and germ-free.

Boil water with some salt and turmeric powder. Switch off the flame. Add gobi and cover the vessel for approx. 5 mins. This will help clean and cook gobhi partially.

Strain excess water and spread gobhi on a kitchen towel to let dry.

Keep rest of the ingredients ready at one place.

How to make Tandoori Gobhi at Home–

Mix all the marinade ingredients and add blanched gobhi. Cover and let it rest for at least 30 mins.

Keep it in the refrigerator in an airtight container. Mix well and bake in the oven or cook on a skillet until golden brown.

 

How to give smoky flavour at home –

To give smoky flavour at home to any dish, heat coal directly on an open flame till smoking hot. Place the coal in a katori. Put katori in a container (in which the dish is placed), pour some ghee over it and cover immediately. Let it rest for 5 mins. and serve hot.

Things to keep in mind to make perfect Tandoori Gobi –

1. Choose a good quality cauliflower which does not have gaps in between. It should be firm, tight and clean.
2. Blanch gobhi /cauliflower well, it ensures thorough cleaning and takes less time to cook.
3. Use thick and fresh yoghurt for marination.
4. Kashmiri red chilli powder adds good colour to it, though adding it is optional.
5. Use mustard oil for this recipe. This gives a nice rustic and smoky flavour to the dish.
6. Keep in check while baking or cooking on a skillet. Do not overcook it else gobhi will turn leathery and chewy.
7. Use coal to give smoky flavour (optional).

 

How to serve Tandoori Gobhi –

Tandoori gobhi makes for an amazing party starter. Serve it along with creamy and tangy mint-coriander chutney.
You can also serve it as a healthy snack for kids.

Add it to occasional festive dinner meals to make it wholesome along with the main course like roti, sabzi dal, raita, salad and dessert to make a complete meal.

 

Step by Step Recipe of Tandoori Gobhi -

 

Blanch Gobhi /Cauliflower –

 

1. Boil water with some salt and turmeric powder.

2. Switch off the flame. Add gobhi and cover the vessel for approx. 5 mins.

 

3. Strain excess water and spread gobhi on a kitchen towel to let dry.

 

Marination –

1. In a mixing bowl add curd, garlic, ginger, turmeric powder, red chilli powder, garam masala powder, cumin powder, salt, gram flour (besan), lime juice and mustard oil. Mix well.

2. Add gobhi in the marination. Mix well.

 

3. Transfer to an airtight container and refrigerate for at least 30 mins.

 

Bake in Oven –

1. Grease a baking tray or line it with foil or parchment paper.

 

2. Spread gobhi over the tray and bake in a pre-heated oven at 200 °C till done. This might take about 30 - 45 mins. Keep an eye and make sure it doesn’t burn.

 

3. Flip once in between.

 

Procedure to cook on stove-top –

1. Heat mustard oil in a pan. Spread gobhi, do not overlay.

2. Cook on a medium flame till.

3. Stir in between as and when required.

 

Bake in Pressure Cooker or Kadai–

1. In a heavy-bottom Kadai, add salt generously. Place a ring over it and let it preheat on a high flame for 10 mins.

2. Grease the baking container and place marinated gobhi.

3. Place the container over the ring and cook for 20 mins., in a pre-heated kadai/cooker on a low flame.

4. If baking in the cooker, make sure to remove the whistle and gasket.

Ingredients
  

  • 1 No. Gobhi (Small)
  • 1/2 Cup Thick Curd / Yogurt
  • 1 Tsp Finely Chopped Garlic
  • 1 Tsp Finely Chopped Ginger
  • 1/2 Tsp Turmeric Powder
  • 1 Tsp Kashmiri Red Chilli Powder (1 Tsp)
  • 1 Tsp Red Chilli Powder
  • 1 Tsp Garam Masala Powder

  • Salt to taste
  • 1 Tbsp Gram flour (Besan)
