My eyes get wide open, mouth salivating and cheeks blushing whenever I hear its Chole Bhature for lunch or dinner.
Chole bhature is my absolute favorite meal ever since I was a kid.
My Mom makes it without soda or yeast and they turn out perfect every single time. Though that recipe requires a bit of planning as it requires overnight fermentation.
The one I am sharing today doesn’t need a lot planning and can be prepared instantly.
After having tried many bhature recipes, I have come up with this fail proof Instant bhature recipe without yeast. All you need to do it take care of all the tips and tricks that I am going to share.
Bhatura is a puffed Indian bread which is deep fried and usually prepared with all-purpose flour (maida). This recipe will yield balloon like bhatura every time single time.
My friends and family love it and demands this Punjabi Chole Bhature often.
This homemade Instant Bhatura recipe requires very basic staple pantry ingredients.

Pre-Preparation required for Bhatura Recipe –
Bhatura or Bhature is best prepared with a fermented dough. Since we are not using yeast in this recipe, we will need 30 mins. to rest the dough.
Though using this bhatura dough recipe we can prepare the bhatura instantly, but if you time time in hand, you can rest the dough for 2-3 hours for even better results.
How to make Puffed Indian Bread, Bhatura at home –
In a mixing bowl, add maida, whole wheat flour, sooji, salt, sugar, baking powder, baking soda, oil and curd. Mix well everything.
Knead a semi soft dough with luke warm water. Cover and let it rest for 30 mins.
Uncover, knead again and divide it into equal parts. Roll out and fry in a hot oil.
Things to keep in mind while making Bhature at Home –
1. Mix all the ingredients with the flour by rubbing in between your palms.
2. It is important to knead the dough well. Knead it for good 10 mins, or until soft.
3. Make sure to knead a semi soft dough, and let it rest for 30 mins. Cover it with a lid or with a damp cloth.
4. While kneading the dough, keep in mind that it will become softer while resting. Knead accordingly, else it will get difficult to work with the dough.
5. Fry in a very hot oil, check temperature by dropping a tiny piece of dough into the oil. It should rise immediately.
6. Do not roll out too thin, else it will turn crispy and not puff up as desired.
7. Keep the temperature of oil in check while frying.
8. Grease the dough balls while rolling.
9. While frying bhature, do not flip a lot, let it puff up by itself.
10. In case bhaturas do not puff up, press gently using a perforated spatula and then turn over.
Step by step recipe of Instant Bhatura ta home –
Kneading dough –
1. In a mixing bowl, add maida, whole wheat flour, sooji, salt, sugar, baking powder and baking soda, mix well.
2. Next add oil and curd and rub the flour in between palms to mix everything well.
3. Using luke warm water knead a semi soft dough.
4. Make sure to knead the dough for good 10 mins., to get the perfect soft and smooth texture.
5. Cover the dough with a damp cloth or lid and let it rest for 30 mins.
6. Uncover and knead again till soft and smooth.
7. Divide the dough into equal balls.
Frying Bhaturas –
1. Grease one ball at a time and roll out the dough balls into desired thickness. It should not be too thick or thin.
2. Check the temperature of oil, drop a tiny piece of dough in the oil, it should rise immediately.
3. Carefully slide in the bhatura in hot oil and it let it puff up.
4. Turnover and cook on both sides.
5. Strain excess oil on a kitchen towel.
6. In case the bhaturas do not puff up by itself, press gently with the back of a perforated spatula and then turn over.
7. Serve hot with chole.
How to serve Bhatura –
Chole bhature is a famous dish from North India. Bhature are served with Punjabi chole and sliced onions on the side along with carrot and chilli pickle, Boondi Raita and fried green chillies.

Ingredients
- 3 Cups All Purpose Flour (Maida)
- 3/4th Cup Whole Wheat Flour (Atta)
- 1/4th Cup Sooji
- Salt to taste
- 1 Tsp Baking Powder
- 1/2 Tsp Baking Soda
- 1/4th Cup Curd
- 1/4th Cup Oil
- 2 Tbsp Sugar
- 2 Tbsp Oil
Instructions
