Doodhi Muthia Recipe, How to Make Lauki Muthia at Home, Dudhi na Muthiya Recipe
Doodhi Muthia is a healthy Gujarati snack prepared using whole wheat flour, gram flour, doodhi(lauki/bottle gourd) along with other ingredients.
I tried Gujarati Doodhi Muthia first time only after I got married. Once I visited a relative’s place and they served us muthia, I loved it so much that I learned the recipe from her and tried my hand at it. Since then I have tried muthia at many other places but nothing like her recipe. I thank my stars to have such amazing cooks around me to learn something new each day.
I have always loved and appreciated Indian cuisine. There is so much to learn and explore in every region and state. Every region has its own specialities which unfortunately are getting lost. Whenever I visit a new place I explore, try and learn local dishes.
Muthia is an easy snack recipe which can be prepared well in advance and enjoyed the whole day. It also makes for a good tea time snack or even to satiate hunger pangs which we get at any time of the day. You can also pack this in your kids’ tiffin for a quick snack break. I often pack muthias for long train journeys or picnics. It makes for a good bite-size munching option.

How to Prepare -
Muthia is a quick recipe which does not require any major ingredients. Wash, peel and grate lauki. Finely chop onions which are optional in this recipe. Keep ready other required ingredients.

How to Make Gujarati Doodhi Muthia –
In a bowl mix together whole wheat flour, gram flour, spices, sugar, oil, lauki, onion and lime juice. Add fruit salt and water as required. Make a soft dough. Let it rest for 10 mins. Meanwhile, boil water in the steamer and grease the steaming plate.
Steam muthias on a high flame for 20 -25 mins. Temper with mustard seeds and curry leaves. Serve with mint chutney.
Step by Step Recipe of Doodhi nu Muthia -
• In a mixing bowl add whole wheat flour, gram flour, turmeric powder, red chilli powder, coriander powder, salt, sugar, finely chopped green chilli, finely chopped onion, grated lauki, oil and lime juice.
• Mix everything well together.
• Add fruit salt (eno) and water and mix well to form a soft dough.
• Apply oil over the dough and let it rest for 10 mins.
• Meanwhile, prepare the steamer by boiling water and greasing steaming tray.
• After the dough is well rested, divide it into two equal portions.
• Form a cylindrical shape and place them on a steamer plate.
• Steam for 20 – 25 mins on a high flame.
• Do a knife test. Insert a knife into muthia, if it comes out clean it indicates muthias are well cooked from inside.
• Bring muthias out from steamer and let it cool.
• Cut into discs.
For Tempering -
• Heat oil in a pan. Add mustard seeds and let it splutter.
• Next, add sesame seeds, asafetida (hing), curry leaves and cook on a low flame for half a min.
• Then add turmeric powder and mix well.
• Finally, add muthias and mix well.
• Cook on both sides till crisp.
• Serve with mint chutney.

Ingredients
For Muthia
- Whole Wheat Flour - 1 Cup
- Gram Flour Besan - 1/4th Cup
- Turmeric Powder - 1/2 Tsp
- Red Chilli Powder - 1/2 Tsp
- Coriander Powder - 1 Tsp
- Salt to taste
- Sugar - 1/2 Tsp
- Finely Chopped Green Chilli - 1 Tsp
- Finely Chopped Onion – ½ Cup Optional
- Grated Bottle Gourd Lauki – ½ Cup
- Oil - 1 Tsp
- Lime Juice - 1 Tsp
- Eno Fruit Salt - 1/2 Tsp
- Water as required
For Tempering -
- Oil - 1 Tbsp
- Mustard Seeds - 1 Tsp
- Sesame Seeds - 1 Tsp
- Asafetida - 1/8th Tsp
- Curry leaves
