Kathal Kabab Recipe, Lucknow's famous melt-in-mouth Veg Galouti Kebab
Kathal (jackfruit) is a very underestimated fruit/vegetable. I believe it is very versatile and can be devoured even when ripened or raw. Raw jackfruits come handy in various recipes like kathal kebab and many more varieties of starters and mains. There are very few restaurants which use this vegetable in any form. How I wish we get more varieties of dishes in restaurants for vegetarians other than paneer and mushrooms.
Though it is a bit tedious to cut kathal, so I get it cut from the vendor itself. Which means that it must be prepared within 2 -3 days, as cut vegetables can’t be preserved for more days. I usually do not prefer to freeze vegetables and rather like to eat them fresh. So, whenever I buy kathal (jackfruit) I make sure to prepare different varieties in the 2-3 span of days.

This kathal kebab recipe is much simpler than it seems to be. I myself could not believe the fact that such an exotic party dish can be prepared so easily. The best part of it is the melt-in-mouth texture. I call it a galouti kebab for vegetarians. Being a vegetarian, I have never tasted actual galouti kebab but having heard of its story behind the melt-in-mouth texture I am sure these kebabs will surely give the competition to that of non-vegetarian ones.
How to prepare –
The most difficult preparation required to make any kathal recipe is to cut it. It is always better to get it cut before buying.
Boil kathal (jackfruit) for 2 whistles and make sure it is not overcooked. Let it cool. Also, boil potato separately. Finely chop onions, green chillies and coriander leaves. Keep spices ready before you start making.
How to make Kathal (jackfruit) kebab –
Mash kathal well using hands (watch the video for better understanding). Add mashed potato, onion, green chilli, coriander and spices and roasted besan. Mix well. Shape them into kebabs/tikki/cutlets. Cook on a grill (optional) pan.
How to preserve cut kathal/jackfruit for 2-3 days –
As I mentioned earlier I always prefer to buy already cut kathal. Apply oil and lime juice all over kathal very well. Store in an airtight container for 2-3 days.

Mash using fingertips (watch video).; Add boiled and mashed potatoes. Add finely chopped onion, green chillies and coriander leaves.; Add roasted besan (gram flour), salt, red chilli powder, garam masala powder, chaat masala powder and black salt.; Mix well.; Shape them into kebabs/tikkis/cutlets.; Cooking kebabs –: Brush oil on a grilled/non-stick/ iron pan/tawa.; Place kebabs over a hot pan.; Cook both sides on a low flame till golden brown. Cook on sideways using tong.; Serve hot with mint chutney and salad on the side.; - <strong>Tips & Tricks – </strong>
• Make sure kathal is not over boiled.
• Mash using fingertips for better results.
• Adjust spices as per taste.
• Roll the sides of kebab on the pan for better cooking (check out video for better understanding).
• Add roasted besan for perfect binding, taste and texture. Make sure the besan is not raw.
• It can also be baked or deep fried.
