Being a family of foodies, we love to explore the food from every culture. I have got a chance to learn a lot of cuisines from my and my in-law’s families.
This recipe of Guvar Muthia Nu shaak is inspired from Gujarati culture. My MIL makes it and I have modified a bit to suit everyone’s palate.
Guvar Dhokli Recipe is a cluster beans and freshly made gram flour dumplings along with spices. This makes for a great weekday dinner along with Bajra Nu Rotla or whole wheat roti.
This sabji of guvar/gavar/guar fali is indeed different which you can make for a change, when you get bored of regular sabzis at home.
The muthia or dhokli are freshly prepared using gram flour which adds the crunch and flavour to the gavar fali ki sabji.
It is easy to make, but prepared differently than other Indian curries.

How to prepare for Guvar Dhokli Nu Shaak –
Wash guvar fali thoroughly. Cut both the ends and remove fibrous strands from sides, if any. Cut into 1 -1.5-inch pieces.
Keep the flour, spices for the dhokli (muthia) and other ingredients ready. Make tamarind pulp or use store bought one.
How to make Guvar-Dhokli-Nu-Shaak at Home–
Steam guvar fali with some sugar and salt.
Prepare dhokli dough using gram flour, rice flour, oil, curd and spices. Let it rest for some time and then shape them into muthias. Boil them, strain and then cook in some oil till crisp. Set aside.
Make a puree with grated coconut, green chilli, ginger, turmeric powder and red chilli powder using some water.
Cook the puree in oil till done, add some hing and give it a mix.
Next add steamed gavar fali, jaggery, tamarind pulp and garam masala powder. Mix everything well. Finally add the muthias, guve it a mix. Serve hot.
Things to keep in mind while making Guvar Dhokli Nu Shaak –
1. Do not over steam the beans, else the sabji will become soggy.
2. If the beans are fresh, you can cook it directly in oil.
3. Make sure the muthia are not too hard. Knead a soft dough to make good muthias (dhokli).
4. Use fresh coconut for this recipe, to make puree.
5. Cook puree till it starts to leaves oil from sides.
Step by Step Recipe of Gujarati Guvar Dhokli Recipe –
Prepare Gavar Fali (Cluster Beans) –
1. Wash and cut cluster beans into 1- 1.5 inch pieces.
2. Make sure to remove any fibrous strands from sides.
3. Transfer the fali in a container, add some salt, sugar, oil and little bit of water.
4. Heat water in a pressure cooker till it starts steaming.
5. Place the fali container in pressure cooker. Cook for 1 whistle.
6. Open the cooker when pressure is released by itself. Set aside.
Prepare Dhokli Dough (Dhokli) –
7. In a mixing bowl add besan, rice flour, oil, hing, turmeric powder, red chilli powder, coriander powder and salt.
8. Mix everything well.
9. Add curd and soft knead dough.
Shaping & Cooking Muthias –
10. Grease your palms, shape the dough into log.
11. Cut into small equal pieces.
12. Shape them into muthias (dhokli).
13. Boil water as required. Add a little bit of oil so that dhokli do not stick to each other.
14. Transfer dhokli into boiling water and let them boil, till it starts to float on the top.
15. Do a knife test to ensure perfect cooking.
16. Strain excess water.
17. Heat oil in a pan. Add a little bit of turmeric. Make sure it doesn’t burn.
18. To it add muthias, mix well.
19. Cook till golden borwn and crisp. Set aside.
Preparing Masala –
20. In a mixer jar, add grated coconut, ginger, green chilli, turmeric powder, red chilli powder and some water.
21. Blend to make a fine puree.
22. Heat some oil in the pan, add the puree and let it cook on a medium flame.
23. Cook till it starts to leave oil from the sides.
24. To it add hing and give it a mix.
25. Next add steamed beans (guvar fali) and mix well.
26. Now add salt, tamarind pulp, jaggery and garam masala powder.
27. Mix everything well.
28. Add dhokli (muthias) and give everything a nice mix.
29. Finish it with some coriander leaves.
30. Serve hot.
How to serve Guvar Dhokli Nu Shaak –
Guvar Muthia Nu Shaak goes well with roti, puri or paratha.
You can add pulao, salad, raita and roti to make a complete meal.

Gavar Dhokli Nu Shaak
Ingredients
- 500 gms Guvar Fali (Cut into 1 - 1.5 inch pieces)
- Salt to taste
- 1/8th Tsp Sugar
- 1/4th Tsp Oil
- Water as required
For Dhokli -
- 1/4th Cup Roasted Besan
- 2 Tbsp Rice Flour
- 1/2 Tsp Oil
- 2 Tbsp Water
- Salt to taste
- 1/4th Tsp Turmeric Powder
- 1/2 Tsp Red Chilli Powder
- 1/2 Tsp Coriander Powder
- 1 Tbsp Curd - 1 Tbsp
- 1/8th Tsp Hing water
- Water as required
- 1/4th Tsp Oil
For Masala -
- 1/4th Cup Grated Coconut
- 1 No. Green Chilli
- 1/4th Tsp Turmeric Powder
- 1 Tsp Red Chilli Powder
- 1 Tsp Grated Ginger
- Water as required
Other Ingredients –
- 1.5 Tbsp Oil
- Salt to taste
- 1 Tbsp Tamarind Pulp
- 1 Tbsp Jaggery -
- 1/4th Tsp Garam Masala
- Coriander leaves
Instructions
